Wow. Your work is very impressive. Is it possible for you to share your x/y graph? I like the idea of dehydrating essentials. Sometimes I have more than I can eat before they go bad. For me though I think I would just add some to a smoothie. I don't think I would have the patience. Maureen

If you don't mind cooking, then you are in luck. Try these cookbooks: "Artisan Vegan Cheese" and "the Homemade Vegan Pantry" by Miyoko Schinner. You will find recipes for butter , sour cream, and cheeses. They taste good, very good. Sure they may not taste as good as your favorit...
