thjj and Starfish, if you wish to reduce the high glycemic effect of the potatoes, while it's not quite the same as a hot potato from the oven, cold potato salad is significantly higher in resistant starch. You could always do OMAD = One Meal A Day, which will keep you in nutritional ketosis all the while you're not eating. I use it and haven't heard anything negative about it. DHA/EPA is my favorite supplement to take. It's my favorite bc I noticed it fixed my dry eyes and hypertension very noticeably.
