What complicates this is that it is generally considered that the brain makes all its own apoE and the the plasma apoE all comes from the liver, and the two pools do not mix. It's been a couple years since I looked, but I recall cooked plantains and bananas don't have much resistant starch. It is mainly about the raw RS2. Still useful if you eat bananas with some green on the peel.
