I've been wondering if I can ferment with it. Here are the pure silicone pouches I'm using for my individual servings, but I wonder what donbob uses for a whole roast? I also don't want to use plastic, so I looked for "pure" silicone. A lot of silicone products have other things mixed in....

As far as low temperature cooking, look into 'sous vide'. I use it often. In fact, my sous vide has been running at 135F for the last five days.
