Gathering Recipes—I need your help!

Hello everyone—I’ve come to ask for your help. Do you like to cook? Have you found some delicious ways to stick to your food plan? Would you be willing to share your favorite recipes with our ApoE4.info community? I have volunteered to collect and curate the favorite recipes of our community, and organize them on the Wiki page.

When folks find out their ApoE status, and begin to make lifestyle changes, the question of “What can I eat?” is always a big one. I hope that as a community, we can open up and share our collective cook books to help inspire those who are just getting started, as well as those of us who just need some new ideas. Recipes can be simple or complex.

I realize that not all of us are following the same food plan, but there is room for diversity here! I will figure out a way to organize and/or tag recipes so that it is easy to find the ones that are vegan, vegetarian, LCHF, etc.

Here’s what I need from you: Please attach or post a copy of your favorite recipe(s), either by replying to this thread or you can send by PM to me. Please include:
1) Name of the recipe
2) Ingredients and cooking instructions
3) Source of the recipe (from a website, adapted from a family recipe, you just made it up one very inspired day, etc.)
4) A photo of the finished creation if you have it

I will calculate the Macronutrient content (Protein/Fat/Carbohydrate) for your recipe using the Cron-o-meter app. However, if you already have the P/F/C %, please send it along with the recipe. You get brownie points for that!

We have had a couple threads for meal ideas here and here, but I look forward to creating a Wiki page where our recipes can reside and be easy to find. Thanks in advance for all of your help!

May I also suggest that measurements be in both measurement systems?

Hi JML, here's my first contribution. A nice alternative to cole slaw and has been very popular when we have friends over. Very easy if you have a food processor to use for the shredding.

Carrot-Apple-Jicama Slaw
Serves 6

2 large carrots
1 small jicama, peeled
1 Granny Smith apple, cored
2 Tbs fresh lime juice
1 Tbs fresh lemon juice
1/4 cup EVOO
2 Tbs fresh orange juice
1/2 tsp sugar (I use Truvia, an Erythritol/stevia blend)
1/2 tsp salt
1/2 tsp Tabasco

Shred carrots, jicama and apple. Place in a large bowl, add lime and lemon juice and toss to combine. In a small bowl, combine oil, orange juice, sugar, salt and Tabasco. Pour over slaw and toss to combine well. Chill well before serving. Best served the day it’s made.

This is one of my staple snacks, slightly modified from an online version somewhere:

Artichoke Hummus

1 14 oz can quartered artichokes hearts, rinsed and then pressed in a strainer to drain the juice
1/4 cup EVOO or avocado oil or blend (I usually use 1/2 and 1/2)
1 clove garlic
lemon and/or lime juice to taste (I always use lime)
1/2 avocado

Blend (I used the small container with BlendTec)

I fill romaine lettuce and endive leaves with this for a snack.

Love this, JML!

I'll share my no-fail mayo that takes 15 seconds to make- literally, once ingredients are combined.

1 cup of extra virgin olive oil (I use a high polyphenol variety, but a milder version is OK.)
1 pastured egg (Wash the shell with soap and water beforehand to avoid salmonella contamination.)
1/2 lemon or lime
Pinch of salt

Combine all ingredients into a tall cylindrical container. I use the one that came with my immersion blender. This matters because successful mayo is the result of a chemical reaction and all ingredients need to be in close proximity. Start by pouring in your EVOO, then adding one egg. Scantly squeeze the juice of a half lemon or lime (avoiding seeds) and add in a pinch of salt. Place an immersion (stick) blender into the very bottom of the container and blend for 15 seconds. This is important. If you turn the blender on before it touches the bottom of the container, your mayo can fail. If you carefully follow instructions, I promise perfect no-fail mayo every time.

I love making mayo but I use Dijon mustard and egg yolk and if it doesn't emulsify, I'm scuppered!

JML, please let me know if you need any help with creating the Wiki page or calculating the macros- I know how time consuming that can be...

NewRon--Glad you suggested this (I assume you mean metric and US (Imperial) weights and measures?). I will do my best with this. Can I consult with you if I get stuck on figuring out a metric equivalent?
