Thanks, JML......love to get a meal plan book of sorts. I find I am eating the same boring things for breaky, lunch and dinners. Do any of our amazing members have any recommendations of examples of Bredesen healthy meals? Specifically looking for healthy fats. Was 160 6ft and now down to a steady 140 which is a little light. Tring to gain more weight :) 49 years 4/4

Charcoal Bread
I developed this recipe after coming across a charcoal bread recipe and tweaked it to contain mono-saturated fats and to be more APOE 4 friendly
It's fantastic for detoxifying the gut and don’t worry you want absorb the charcoal, it will actually help remove any toxins from the gut.

Ingredients
60g Brown flax seeds whole + 100ml hot water
30g Brown flax seeds, freshly ground
70g psyllium husk
70g coconut flour
30g/ 2 Tb hemp protein powder
30g black nigella seeds
2 Tb Activated charcoal
1 Tb coconut sugar
3 tsp baking powder
1 1/2 tsp salt
3 eggs
2 Tb Olive oil
1 Tb Apple Cider Vinegar
350ml filtered water

Charcoal Bread Method
Pre-heat the oven to 160°C fan forced or 180°C.
Grease a bread tin (11 x 18cm) and line with baking paper.
Soak the whole flax seeds in the hot water and set aside.
In a food processor grind up the other flax seeds, then add the psyllium husks, coconut flour, hemp protein powder, nigella seeds, activated charcoal, coconut sugar, baking powder and salt until combined.
Separately in a large bowl, whisk up the eggs, olive oil, ACV and whisk in 350ml of filtered water until smooth.
Slowly add the ground ingredients to the egg mixture, mixing thoroughly forming a firm wet dough.
Scoop the dough mix into the prepared tin, smoothing down and bake for 1hr 30mins, turning midway.
Allow to cool a little before turning out onto a wire rack and to completely cool before serving.
Store in the fridge for up to 5 days or 3 months in the freezer.

Fish Skewers with Avocado Dressing
I just love fish cakes of all sorts and these are so easy to make and are so tasty, Eat them as a starter or as finger food, all you need is boneless fish fillets.
Feature Fish; Crimson Snapper
Makes 8 skewers
Cooking Time 30 minutes
Ingredients
Fish
400g firm white fish fillet, skin off and roughly chopped
1 egg white
2cm knob of fresh ginger, peeled and roughly chopped
1 clove garlic
3 Kaffir lime leaves, roughly chopped
3 coriander roots and stalks, roughly chopped (Coriander leaf for Serving)
2 Tb of chilli sauce or other hot sauce
1 tsp fish sauce
4 lemongrass stalk, halved

Avocado Dressing
1 Avocado, skinned and de-seeded
2 Tb Lemon juice
1 Anchovy fillet
1 clove garlic
1/4 cup of Olive oil, you can use some of the oil from the anchovies
1/2 tsp salt
Place into a jar the avocado, anchovy fillet, lemon juice, garlic, salt and avocado and blitz using a stab mixer until creamy

Fish
Note the fish is twice cooked.
Pre-heat the oven to 200°C
Pre-heat a skillet or large frying pan (I use an oven proof frying pan, that i can place straight into the oven later)
Place the fish, egg white, ginger, garlic, kaffir lime leaves, coriander, chilli sauce, fish sauce into a food processor and blitz until well combined and smooth.
Shape the mixture around lemongrass stalks.
Oil the pan and cook the skewers in batches just until browned on all sides
Finish cooking the skewers by placing onto a lined baking tray and baking for roughly 5 minutes.

To Serve
Smear the dressing on a serving plate and place the fish skewers on top and sprinkle with coriander leaves.

Tip of the day: Peel ginger using a spoon.
