Drae, that is awesome! Does not the plate look nice, and colorful with the veggiesI am at the 3 colors of veggies every meal stage! LOL
I love to have color on my plate, and since I have been adding it to every meal, I have started noticing how boring and plain SADs (Standard American Diet) diet plate look like!
What are your favorite veggies to eat for breakfast, if you eat one?

Ah, Magda. Good one. I used to like peas but no longer eat just peas. I usually go for whatever is leftover in the fridge (we cook pretty clean and for leftovers). If I need more than that, I will often go for a little spinach from the freezer, and, often end up with 2-3 strips of bell pepper.Magda wrote:

What about you? I really need to get some new (colorful) veggies. Do you know where there is a thread on this? Clearly I could use some help. I find myself eating the same veggies over and over.

I drink coffee with ghee, and collagen sometimes with MCT oil. A few hours after that, and a workout, I will have a smoothie (greens usually kale, spinach, romaine, dandelion, swiss chard, parsley with some coconut milk, nut butter, cucumber, piece of avocado, piece of ginger, a few frozen strawberries, protein powder (plant or animal base), water.
If I do not have a smoothie, I eat sardines or salmon with greens, pickles, avocados, radishes, red cabbage, olive oil. I cannot eat eggs so these two options are my favorite.
I have attached for you a list of phytonutrients rich foods categorized by color, maybe it will inspire you, and help you to create delicious breakfast.
We are also working on a recipe Wiki page. So, stay tuned, I am sure it will be filled with delicious breakfast ideas:) I hope this helps.

Oh, Magda! You are my hero of the day! LOL One of my favorites is to occasionally enjoy home-canned pickled beets. Although, maybe I better go revisit that recipe checking for sugar, and switch to fresh beets. I have so much to learn but feel better almost every day now, probably mostly from sleeping better and walking. And the water. And, less sugar more veggies. LOL Hmmm...
Funny, I drink decaf coffee with coconut oil instead of ghee. I will work on expanding my veggie color palette. Others may benefit from a little caffeine but I stripped those gears long before there was decaf, finding myself now sensitive even to the caffeine in decaf. I was a coffee-holic and now I pay the price.
