I make my own sourdough bread and I've read that the fermentation helps break down the gluten. It takes a long time to make and so I don't do it very often. I've also noticed it does not spike my appetite like regular bread. I eat a couple of slices and I'm sated for a long time.
I think making your own sourdough is fantastic and breaking the gluten down is awesome, I really look forward to my local market and get some every time I go there.

I think probably posting each one as a separate forum is the best way to get some interesting discussions and responses to your questions, they are not run of the norm things for me as I specialize more in helping the act of changing behavior rather than the nutritional specifics.
