Did a search for cardamom to see what adding cardamom to my coffee might do for me ...

"... some of the extracts such as anise and saffron have not only inhibitory effects [on glycation] but also aggravated this event and have proglycation properties. In accordance with the results obtained we can conclude that wild caraway, turmeric, cardamom and black pepper especially wild caraway extracts are potent antiglycation agents, which can be of great value in the preventive glycation-associated complications in diabetes."

These were extracts. I wonder how translatable to food spices. No time to read the article.

If caraway in coffee is good enough for Icelanders it's good enough for me. I'm going to experiment to make my morning coffee a spice-rich, anti-glycation black belt.

Thanks. So far so good. I'm just adding cardamom and Ceylon cinnimin. Plan to get the caraway. Of course the ones I use may not act the same as those in the study, but suddenly I love my coffee spiced! Coffee itself is supposed to be high histamine but it never really was for me. Now I'm on Ketotifen because I was sick of reacting to everything. Doing a lot better. Fingers crossed it will have Bredesen's blessing.
