Whoo Hoo. Costco has 2 pound bags of fresh cranberries in the Produce cooler this time of year. I buy around 10 bags and put in my freezer for year round use. I grab a hand full of frozen berries, throw them in a smoothie or microwave for 30 seconds to defrost to use in my "nut and seed cereal" along with wild blueberries. I also add them to almond flour muffins, etc. I had 4 bags in my cart at Costco yesterday and think that I got stopped 5 times by people wondering what I was going to do with them. Cracked me up! They've become my favorite "go to" berry. I am so thrilled to hear that my bifdobacteria love them too!

That's fantastic Carrie! If you have the time, could you share how you make your nut and seed cereal, and your almond flour muffins as well? I'd love to try both out! Thanks!

Banana Muffins

Prep 10 mins ∙ Cook 35 mins ∙ Makes 12

2 large ripe bananas, mashed
3 eggs
1 tablespoon pure vanilla bean paste or extract
¼ cup avocado oil
2 cups finely ground almond flour (Honeyville farms is good brand)
½ teaspoon fine sea salt
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
(You can also add berries to this recipe if desired)

DIRECTIONS

LINE 12 CUP MUFFIN TIN with paper liners
PREHEAT oven to 350F

IN LARGE BOWL, whisk together first 5 ingredients
IN SEPARATE BOWL, whisk together remaining ingredients
FOLD dry ingredients into wet ingredient until thoroughly combined
WITH ICE CREAM SCOOP or spoon, fill muffin liners 3/4 full with batter
BAKE 30 - 35 minutes or until tops spring back when touched
REMOVE from oven and let cool in pan 5 minutes
TRANSFER muffins to cooling rack

These are great to keep in the freezer for a quick snack.

For my "cereal", I'll combine berries, a tablespoon each of plantain flour (optional), golden flax, chia and hemp seeds, pumpkin seeds, large flake coconut, cinnamon and coconut kefir (a can of full fat organic coconut milk with 2 tablespoons finished kefir water, covered and set on your counter for 24 hours to sour - then refridgerated) . Sometimes I'll add raw almonds or sesame seeds. You can add protein powder (like a collagen powder) too. It's really up to you and what you have in your cupboard.

This says that green banana flour should be eaten raw, as cooking reduces the resistant starch content (though it doesn't say by how much).

I've tasted a green plantain muffin recipe a couple of times. It's heavy on carbohydrates but since we are looking at the resistant starch I decided to share it. I am not sure what happens to the resistant starch while and after exposing to high temperature but green plantains are super versatile for baking and easy to transform not only into muffin dough but also pancakes.

Ingredients:

2 large green plantains (should be 1 1/2-2 cups pureed)
4 eggs
1/3 cup coconut oil, melted
1 Tbsp vanilla
3-5 Tbsp date sugar or evaporated cane juice (optional)
1/4 tsp salt
2 tsp baking soda
2-2 1/2 cups blueberries, fresh or frozen [or substitute your favorite fruits, chopped nuts, or chocolate chips (you only need about 1 cup of mini chocolate chips)]
1/4 tsp cinnamon

Has anyone tried using glucomannan as a mycotoxin treatment? If so, how did you use it?
