I would recommend a book called the Blood Sugar diet by Michael Mosely, as it sounds very similar to what you are doing already. and with some ideas about getting the amount of carbs down. he has Type 2 diabetes and uses this to help him.
there is a recipe book too
It has two options doing 800 cals a day for 8 weeks (or could do intermittent fasting) or simply not calorie counting. It has reversed diabetes in some people. The recipes are really good and simple, i use them myself.
